We're in pretty unexplored territory here, actually. Lutins in the days of classic MK didn't have surnames, just tribal and clan affiliations. For MK2K, the only Lutin we've seen thus far is Rafak Aliri, the private investigator.
My guess is that lutins who integrated into Imperial society would probably have adopted surnames based on words in their own language, so you could probably come up with any reasonable combination of 2-4 syllables and use that. No one has ever really established a lutin language, so there aren't any rules about it at this point. The general tone of the language is clipped and a bit harsh, with lots of hard consonants, but there are exceptions to every rule.
As for Italians, the closest equivalent group in MK are the Pyralians. When I need a character name that sounds like it belongs to a given ethnicity, I generally do a web search for surnames in that belong to the cultural group I'm imitating. I try not to pick anything that is too stereotypical — I probably wouldn't name a Sathmoran "McCoy", for instance — but other than that, I don't have any problem with stealing things wholesale from the real world. Michael Perelli, for example, is a Flatlander of Pyralian extraction, and uses a real Italian surname; Sophie Gallagher is Sathmoran, and uses a genuine Irish name.
One excellent resource you should check out is Behind The Name — there are tons of names in there from all sorts of nationalities, as well as descriptions of each name's meaning. I'm sure you can find an Italian surname in there that sounds good without being one of the common ones we hear every day on television. :)
